Cheeses and Wine

Lets get all your brains working here my fine Wino's.

I would like to see a pairing of wines and cheeses based on your past experiences. Example:

Buttery Heavy Cheeses (Brie) would be best paired with Citrusy/Acidy Wines that cut it and compliment it.

Cheeses to match are:

Brie, Gorgonzola, real good Parmesanio Regiano, Goat Cheese, e.t.c. Go crazy and let the games begin.

Please do not over look my fav whites: Pinot Noirs and Grigios.

    Camembert & Cab. Blue or Gargonzola & Pinot Noir

    One I am stuck on is, what goes with Semillon? Any suggestions?

      depends what kind of semillon. If it's Sauternes, the classic is Roquefort, of course. :)

      For dry semillon, the same sorts of mild and somewhat creamy cheeses that go with Sauvignon Blanc. Chevre would be great, along with many other goat's milk cheeses. If you've found a more intense wine (any Semillon coming from NZ lately?), you might even try something more pronounced but still creamy like a Pont L'eveque instead of Brie.

    My fave is a truly traditional New Zealand Sauvignon Blanc with a Maytag Blue Cheese Salad Dressing. It is to die for! And that comes from a RED wine nut!

    Just thought of another one. There is a wine from Spain called Castel de Remi Gottim Bru that goes perfect with a 3 year aged Ghouda cheese.
